Jack C. Parker served as the SHSU Vice President for Finance and Operations from 1987 until his retirement in 2008.

Parker graduated from SHSTC in 1964 with a Bachelor of Business Administration degree in accounting. He returned to SHSC as the associate director of admissions in 1967. In subsequent years, he served the university as business manager, comptroller, and vice president for finance.

In 2011, the Parker Dining Room in the newly-completed Old Main Market was named in his honor.
